Spaghetti Squash with Chickpeas and Kale

spaghetti squash

When I first started cooking with spaghetti squash, I paired it with a tomato sauce, as you would real pasta. But I learned quickly that keeping this accompanying ingredients light and firm, rather than saucy, can still bring flavor without letting the squash get mushy.

tote bagHi Members,

We need volunteers in the 2pm-4pm shift this week, please come help out if you can. If you haven't had a chance to sign up for your volunteer shifts yet, be sure to do so here. All summer members must complete 2 shifts, and fall members must complete 1 shift.

Also, don't forget that we're now selling tote bags! They are $15 each and you can pay for them with Venmo, cash, or check.

Wow 41 degrees Fahrenheit as I write this, this morning…10 years ago at this time that would most likely have been a frost. The week will be a typical fall week with highs in the 60s and lows in the 40s.

The storage crop harvest continues this week (Winter Squashes, Carrots, Beets, and Jerusalem Artichokes). We are planting lettuce, greens, dill and cilantro in our high tunnels now for late fall, early winter and spring harvest. The guys are continuing to clean fields from summer crops. They will also begin preparing the high tunnels for winter by repairing doors and putting bracing to protect from snow loads.

Haifa and I attended the Farm Aid pre-concert events (minus the music) on Saturday and the mood at the press conference opening for the event was somber and filled with anger. John Mellencamp urged people to support small local farms and warned of apathetic behavior where large agricultural concerns pull the wool over the eyes of the American people. Neil Young reminded everybody to vote to change the current status. We were on a panel that talked about Diversity in Agriculture. We thank all our CSA members that continue to support us and support other local farms.
