Root Vegetable Ragout

vegetable ragout

This vegetable ragout is an easy way to make a dent in all of the root vegetables piling up in your kitchen. It calls for kale but mustard greens will be tasty too!

high tunnel

Good day…I write this after having looked at the 10-day forecast. Not bad: no snow in the forecast and not many below freezing nights (If it holds true). Next week looks pretty nice with some highs in the upper 50s. However not enough light or sun to push things to grow rapidly.

We are still pulling in storage crops from fields as we have been doing the last few weeks. In addition, the guys are bracing the high tunnels with 2x4s to help with snow loads in the winter. You can see a 2 x 4 in the aisle where the guys are harvesting spinach. We are cleaning out high tunnels that and tomatoes and eggplants in them. We are curing the last of the sweet potatoes pulled out of the ground by exposing them to high heat for several days. The second picture shows radishes being harvested from a field covered with row cover. We are also spending a lot of time working on visas for our crew next year.

Vegetable of the week: Turmeric
Turmeric is a tropical plant with banana like leaves that is related to ginger. Turmeric is used throughout the world to color food mostly. However, the health benefits derived from eating turmeric are debated but there is evidence to support its anti-inflammatory properties if eaten as turmeric and not in tablet or capsule form.

Thank you,
Norwich Meadows Farm
