Toasted Coconut Rice with Bok Choy

coconut rice

My new obsession is toasted coconut rice. This recipe doesn't call for it, but you can also toast unsweetened coconut flakes in the pan before you sauté your veggies, and then sprinkle on top of the finished dish for some added texture. The recipe calls for bok choy and green beens, but many of our veggies this week would go good with this.

Get the recipe here.

CSA membership numbers are low this year, not just in our CSA but in CSA programs around the country. CSA programs are crucial for keeping small farms running, which is more important now than ever before. We hope that you'll be able to help support Norwich Meadows Farm this season, but we also ask that you download our flyer to share with your friends, family, and coworkers to help the CSA community grow and thrive. Thank you for your support!

New York City's Green New Deal Mandates Composting—And That's a Win

On Earth Day last month, Mayor de Blasio’s announcement of a “Green New Deal” for New York included a humble resolution to make organics collection mandatory. New York City sends four million tons of trash to landfills every year, almost a third of which is food, which releases methane as it decomposes. Removing 80% of that would cut methane emissions equivalent to 4 billion pounds of CO2 each year—akin to taking 385,000 cars off the road.

So far the city hasn't been able to get composing processes off the ground as planned, but the issue isn't as complicated as you would think.
